About Soy Simplified
After dabbling for years with soy beans, I decided to purchase a soy milk making machine. The prohibiting factor to making things like tofu had been dealing with getting from bean to milk. The appliance made the milk making part fast and easy.
When one makes soymilk there are two end products: a pitcher of milk and a pile of the leavings, the ground bean builk that is often referred to as Okara. The okara is nutritious, it contains protien and fiber. In short, I found that I needed to step up my experimentation with the okara to use what we were producing. Soy Simplified is a log of experimentation with soy milk, okara, tofu, the soymilk making machine in general and the recipes that result.
